Still tasty after all these years? (not related to real estate)

I hate to throw away food, but I also hate to eat food that will either attack me or lacks nutrition because it's been refrigerated too long.  Kathy's method of chucking anything that's been refrigerated over ten days is too draconian for me. So what to do, what to do?
